Kaye's Pumpkin Cookies

These are my grandma's pumpkin cookies.  It doesn't get much better than these.  I have so many yummy yummy cookie recipes...but this one is really beloved.  I always get lots of compliments on these and I always get asked for the recipe.

We grew up eating these, so they just seemed "normal."  But - after I entered the adult world and started sampling other pumpkin cookies (which I usually love, pumpkin chocolate chip is definitely a fav) I realized just how good these are!



This recipe makes a TON of cookies - 6 dozen large to be exact.  So - if you don't want to pass them out to all your neighbors then you can cut the recipe in half.

 Cookies
3 cups Sugar
3 cups Pumpkin
6 cups Flour
3 tsp Cinnamon
3 cups Shortening
3 Eggs
3 tsp Baking Soda
1 1/2 tsp Salt

Frosting
6 TBSP Butter
1 cup Brown Sugar
2 tsp Vanilla
8 tsp Milk
2 cups Powdered Sugar

For Cookies:
1. Cream together the shortening and sugar, add pumpkin, eggs, cinnamon, baking soda and salt. Stir in flour until combined.
2. Drop by the tablespoon onto a baking sheet (I use an ice cream scoop) and bake for 12-14 minutes at 350 degrees.
3. Spread frosting over warm cookies and let cool.

For Frosting:
1. Beat all ingredients together with an electric mixer until smooth.
